  • 200 g guacamole
  • 1/3 tsp smoked paprika

Sandwiches

  • 8 lices bread
  • Half red pepper deseeded and sliced
  • Half yellow bell pepper deseeded and sliced
  • Half orange bell pepper deseeded and sliced
  • 1 beetroot large, cooked, sliced
  • 1/8 red cabbage small, finely shredded
  • 8 lices cucumber
  • pumpkin seeds extra topping, 2 tbsp; pumpkin seeds or some cress, crisps, tomatoes

Instructions

  1. Make smokey guacamole by mixing the guacamole and smoked paprika.
  2. Assemble sandwiches starting with 4 slices, smokey guacamole, peppers, etc and top with the second slice of bread.

Notes
