Ram-Don (Jjapaguri) Noodles with Steak from movie Parasite
Description
This dish blends two popular Korean instant noodles—Chapagetti and Neoguri—by boiling them together briefly, then draining most of the water to leave a shallow amount that aids in simmering the noodles into a thick sauce. The combined dry flakes and seasoning packets create a bold, savory sauce with a hint of spice, especially from the Neoguri seasoning, which can be adjusted to preference. Thinly sliced green onions add freshness, while the seared and seasoned sirloin steak cubes provide a meaty contrast and elevate the dish’s heartiness.
Ram-Don is served immediately while the sauce is still coating the noodles to preserve the texture and flavor balance. It is often accompanied by side dishes like Danmuji (pickled radish) and kimchi in a Korean meal.
Adding steak is optional and reflects its appearance in the film 'Parasite.' Using high-quality beef like Hanwoo or Wagyu enhances the dish, but it's not required. Careful attention to water level and simmer time ensures the noodles don’t overcook and become mushy, keeping them tender but firm.
Ingredients
- 1 chapagetti (Jjapagetti)
- 1 neoguri
- 5 cups water
- 2 green onions
- 4 oz sirloin steak
Instructions
- Boil 5 cups of water.
- Slice green onions thinly. Set aside.
- Cut steak into small cubes. Season lightly with some mirin, sesame oil, sea salt and black pepper.
- Heat a non-stick frying pan and cook steak cubes for few minutes until it's cooked to your desired doneness. Set aside.
- Open noodle packages and dry flakes and soup packets.
- When water boils, add both noodles to pot and boil for 2 min.
- Drain water (about half) from pot, still leaving enough water to so it comes up to just below the top of the noodles. Return pot with noodles to stove. Turn on to medium-low and simmer.
- Open dry flakes packet from BOTH packages and add to pot. Add all of Chapagetti seasoning packet and 1/2 of Neoguri seasoning packet (add more if you like it more spicy and salty). Keep mixing until noodles are all well coated in sauce.
- Simmer noodles for another 2-3 min until most of the liquid is gone and noodles are well coated in sauce.
- Right before turning off the heat, add the cooked steak cubes and also the oil from Chapagetti. Stir. Immediately transfer to a dish.
- Plate noodles with the steak cubes and top with sliced green onions. Serve with some Danmuji (pickled yellow radish).
Notes
- Eat Ram-Don immediately; noodles will absorb sauce over time and lose texture.
- Adding steak is optional but adds meatiness and mirrors the movie version.
- Use operators like Hanwoo or Wagyu beef if desired, but regular sirloin works fine.
- Monitor water level carefully to keep it just below noodles when simmering for ideal sauce consistency.
