Description
This salad starts by toasting crushed raw ramen noodles with slivered almonds and sesame seeds in butter until lightly browned, which adds a nutty crunch. The base comprises shredded green cabbage, cooked rotisserie chicken, and sliced green onions, layered with the toasted mix to maintain texture.
A dressing made from neutral oil, white vinegar, sugar, soy sauce, sesame oil, and optionally the seasoning packets from the ramen adds bright acidity and umami. The dressing is tossed progressively to prevent sogginess, preserving the salad's crispness.
The combination results in a refreshing dish with contrasting crunchy and tender elements. It can be served as a main or side and benefits from preparation just ahead of serving to keep textures fresh.
Ingredients
- 2 tablespoons butter
- 2 (3 ounce) instant ramen noodles crushed, raw (save flavor packets for dressing if desired, chicken Top Ramen flavor packets
- 1/2 /2 cup almonds slivered
- 2 tablespoons sesame seeds
- 1 head green cabbage shredded (about 10 cups)
- 2 cups rotisserie chicken diced
- 1/2 /2 cups green onion sliced
Dressing:
- 1/2 /2 cup neutral cooking oil vegetable, canola, or olive, generic cooking oil
- 1/4 /4 cup white vinegar
- 1/2 /2 cup sugar
- 2 chicken flavor packet optional, from ramen
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil more to taste, toasted
- salt to taste
- black pepper to taste
Instructions
- In a large skillet, melt the butter and add the ramen noodles, slivered almonds, and sesame seeds. Cook for a few minutes until everything is toasted.
- In a large bowl, add the cabbage, chicken, green onions, and toasted ingredients.
- In a small bowl, whisk together the oil, vinegar, sugar, flavor packets (if using), soy sauce and sesame seed oil. Toss half of the dressing in right before serving so it doesn't get soggy. Add more as desired. Add salt and black pepper to taste.
Notes
- To maintain crunch, dress the salad just before serving and add more dressing to taste.
- Using rotisserie chicken adds convenience but chicken can be substituted as desired.
- Save ramen seasoning packets to add umami flavor to the dressing if preferred.
