Ingredients

The Waffles

  • ½ cup almond flour
  • 2 tablespoons flaxseed meal
  • cup coconut milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 2 egg large
  • 2 tablespoons Swerve
  • 7 liquid stevia drops

The Filling

  • ½ cup raspberry
  • lemon zest of ½
  • 1 tablespoon lemon juice
  • 2 tablespoons butter
  • 1 tablespoon Swerve
  • 3 ounces Brie cheese double cream

Instructions

  1. Mix together all waffle ingredients and then cook on a waffle iron. While warm, lay slices of brie across waffles.
  2. In a pan, heat butter and swerve. Once browning, add raspberries and lemon juice/zest. Let this cook until bubbling and jam-like.
  3. Place waffle sides with brie under a broiler until brie is soft and waffle is slightly crisp.
  4. Assemble waffle with brie and raspberry compote. "Grill" in a pan over medium heat for 1-2 minutes per side.
