Raspberry Coulis

This Raspberry Coulis is a smooth, vibrant fruit sauce made by pureeing raspberries with powdered sugar and lemon juice, then straining out the seeds for a silky texture. Its bright tartness and natural sweetness make it an excellent topping to enhance desserts like cakes, ice cream, or yogurt. The recipe yields about one cup, a convenient amount to drizzle over multiple servings, and can be adjusted for sweetness after straining to suit your taste.

Description

The Raspberry Coulis recipe begins with fresh raspberries blended together with powdered sugar for controlled sweetness, then passed through a fine-mesh sieve to remove the seeds, resulting in a smooth and refined sauce. The addition of lemon juice balances the sweetness with a touch of acidity. The puréeing and straining steps produce a fluid coulis that pours easily over desserts, adding a fresh fruit flavor without any seed texture.

The texture is smooth and pours readily, making it ideal for drizzling or swirling atop cakes, tarts, pancakes, or custards. The balance between the natural raspberry tartness and added sugar creates a bright, fruity flavor that complements a variety of sweets.

This coulis can be prepared in advance and refrigerated for up to a week, allowing for easy use when needed. Adjusting sugar levels after straining ensures the perfect sweetness for different dishes or personal preference. It works well as a simple yet flavorful finishing touch to elevate the presentation and taste of many desserts.

Ingredients

Servings
  • 12 ounces raspberry about 3 cups. see note 1
  • 1/4 cup powdered sugar plus more to taste (see note 2)
  • 1 teaspoon lemon juice

Instructions

  1. In a food processor or blender, add raspberries and powdered sugar. Pulse until raspberries are puréed.
  2. Set a fine-mesh sieve over a small bowl and pour purée through, pressing on the mixture to extract as much juice as possible. Discard the pulp.
  3. Stir in the lemon juice and add more powdered sugar to taste, if desired.

Notes

  • Use about 1½ pints (3 cups) of fresh raspberries; frozen berries can be used but may alter texture and color.
  • Start with ¼ cup powdered sugar and adjust sweetness after straining to avoid over-sweetening.
  • The coulis can be stored in an airtight container in the refrigerator for up to one week.
  • Press the purée firmly through the sieve to extract as much juice and flavor while removing seeds.
