Ingredients
- 12 ounces raspberry about 3 cups. see note 1
- 1/4 cup powdered sugar plus more to taste (see note 2)
- 1 teaspoon lemon juice
Instructions
- In a food processor or blender, add raspberries and powdered sugar. Pulse until raspberries are puréed.
- Set a fine-mesh sieve over a small bowl and pour purée through, pressing on the mixture to extract as much juice as possible. Discard the pulp.
- Stir in the lemon juice and add more powdered sugar to taste, if desired.
Notes
- Use about 1½ pints (3 cups) of fresh raspberries; frozen berries can be used but may alter texture and color.
- Start with ¼ cup powdered sugar and adjust sweetness after straining to avoid over-sweetening.
- The coulis can be stored in an airtight container in the refrigerator for up to one week.
- Press the purée firmly through the sieve to extract as much juice and flavor while removing seeds.
