Raspberry Peanut Butter Bars

These easy peanut butter bars stuffed with raspberry jam are easy to make and the perfect snack or dessert.

Ingredients

Servings
  • ¾ cup butter room temperature
  • ¼ cup peanut butter
  • 1 cup sugar
  • 2 large eggs
  • 4 cups flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 tbsp milk

For the filling

  • ¼ cup peanut butter
  • ½ cup raspberry jam

Instructions

  1. Preheat the oven to 180°C/350°F and line a baking dish with parchment paper.
  2. In the bowl of a stand mixer fitted with a paddle attachment, beat together the butter, peanut butter and sugar until light and fluffy.
  3. Add the eggs, one at at time, beating well after each addition.
  4. In a separate mixing bowl, whisk together the flour, baking powder and salt.
  5. Add the dry ingredients to the peanut butter mixture then beat until just combined.
  6. Add the milk and mix.
  7. Transfer three quarters of the dough to the prepared baking dish and press into the bottom into an even layer.
  8. Spread the remaining peanut butter over the dough then swirl in the raspberry jam.
  9. Crumble over the remaining cookie dough.
  10. Place the baking dish into the oven and allow to bake for 25 minutes until golden brown.
  11. Remove from the oven and allow to cool completely before removing from the pan and slicing into squares.
