Raspberry Vinaigrette

Raspberry Vinaigrette is a delicious, healthy salad dressing made with only a few ingredients. This recipe makes a small batch-- only 3/4 cup-- so double it if you need more.

  • 1/2 cup fresh raspberries (or thawed from frozen)
  • 1/4 cup extra-virgin olive oil
  • 3 tablespoons red wine vinegar
  • 2 tablespoons maple syrup
  • 1 tablespoon finely chopped shallot (or red onion)
  • 1/4 teaspoon fine sea salt

Instructions

  1. Add the raspberries, olive oil, vinegar, maple syrup, shallot, and salt to a blender and blend until very smooth. Taste the dressing and make any adjustments, as needed. For a sweeter dressing, add another tablespoon of maple syrup. For more tangy flavor, add a squeeze of lemon juice, or extra raspberries.
  2. Transfer the dressing to a storage jar with a lid, and serve over your favorite salad ingredients. Raspberry vinaigrette can be stored in an airtight container in the fridge for up to 4 days.
