Description

Raw Vegan Brownie Bites come together by processing nuts and coconut into a fine meal, then combining with cocoa powder, dates, and a pinch of salt to form a cohesive, dough-like mixture. The mixture is shaped into bite-sized balls and rolled in a coating such as hemp seeds, shredded coconut, or cocoa powder to add texture and flavor variety.

They provide a sweet, dense, and chewy snack that doesn't require baking, making them convenient and shelf-stable. The bitterness of the cocoa powder balances the sweetness of the dates, while the nuts contribute richness and complexity.

These bites can be stored at room temperature for a few days, refrigerated for up to three weeks, or frozen for longer preservation. Variations include adding instant coffee or vanilla extract for flavor enhancements, or substituting nuts as needed.

Ingredients

  • 3/4 cup cashew nuts raw
  • 3/4 cup walnuts
  • 2 tbsp coconut preferably lightly toasted, shredded
  • 1/4 tsp salt
  • 1/3 cup cocoa powder plus more for rolling, I use dutch processed
  • 12 date any medium to large soft dates. Use 11 to 12 depending on size, soft
  • 2-3 tsp hemp seeds or coconut or cocoa powder or chia seeds, for coating

Instructions

  1. Add the nuts and coconut to a processor and process until the nuts become an even fine meal.*
  2. Add the cocoa powder and process again to combine well.
  3. Add the dates and salt and process again until the dates have broken down and the mixture is homogeneous. It will take a minute. The dates will break down then the mixture will become doughy. If there are pieces of dates visible, then push the dough down and pulse and process again. Check If the mixture is sticky enough, if not then add a tsp of oil or maple syrup and pulse.
  4. Scoop portions of the dough to roll into balls. Press the balls in bowls of hemp seeds, coconut or chia seed, or cocoa powder to coat.
  5. Store on the counter for upto 3 days. refrigerate for upto 3 weeks or freeze for upto 2 months.

Notes

  • If dates are dry, process them separately before adding nuts to ensure even mixing.
  • Maple syrup with coconut or brown sugar can substitute dates but may require flour to adjust stickiness.
  • Cashews can be replaced with macadamia nuts or extra walnuts depending on preference.
  • Adding instant coffee, vanilla extract, or protein powder can modify flavor and nutrition.
  • Store bites refrigerated up to 3 weeks or frozen up to 2 months for freshness.
