  2. Shape into a ball then transfer to a Silpat or parchment paper lined baking sheet.
  3. Using the palm of your hand, flatten ball slightly, then using the fork gently press downward to make criss cross patterns over entire cookie (it should be about 3 1/2-inches across).
  4. Bake in preheated oven 12 - 15 minutes. Cool slightly then enjoy.

Notes

  • Whisk the egg first, then measure out 1 tablespoon for the recipe; refrigerate the rest for other uses.
  • Use creamy peanut butter that is not natural or homemade for best results in texture and spread.
  • The dough should be just dry enough to shape; over-stirring will make it too dry.
