Recipe for One Flourless Peanut Butter Cookie
Description
The Recipe for One Flourless Peanut Butter Cookie relies on a simple combination of creamy peanut butter, powdered sugar, and egg to create a quick single-serving cookie. The ingredients are combined until the batter thickens enough to hold its shape, then formed into a ball and flattened into a disc. A fork presses a criss-cross pattern on the surface before baking at 350 degrees for 12 to 15 minutes. Cooling slightly after baking completes the preparation.
With no flour, the cookie has a concentrated peanut butter taste and a soft, tender texture without toughness. The powdered sugar adds sweetness and contributes to the cookie’s texture. The small batch approach makes this recipe convenient for one serving without leftovers.
Ingredients
- 1/4 cup peanut butter not natural or homemade, creamy
- 1/4 cup powdered sugar
- 1 Tbsp egg whisked
Instructions
- Preheat oven to 350 degrees. In a bowl, using a fork, stir together all ingredients until well blended and batter begins to dry slightly (the more you stir the drier it will become, you just want it dry enough to be able to hold a shape and form a ball).
- Shape into a ball then transfer to a Silpat or parchment paper lined baking sheet.
- Using the palm of your hand, flatten ball slightly, then using the fork gently press downward to make criss cross patterns over entire cookie (it should be about 3 1/2-inches across).
- Bake in preheated oven 12 - 15 minutes. Cool slightly then enjoy.
Notes
- Whisk the egg first, then measure out 1 tablespoon for the recipe; refrigerate the rest for other uses.
- Use creamy peanut butter that is not natural or homemade for best results in texture and spread.
- The dough should be just dry enough to shape; over-stirring will make it too dry.
- Flatten the dough ball evenly before baking for consistent thickness.
