Description

This recipe uses any mushrooms, sliced or quartered depending on size, combined with chopped garlic and thyme leaves. Small cubes of butter are scattered on top before seasoning with salt and freshly cracked black pepper. The mushrooms are roasted at 400ºF (200ºC) initially for 15 minutes, then stirred and roasted another 10 to 15 minutes to develop a golden-brown surface and concentrated flavor. This method produces mushrooms that are tender yet have caramelized edges.

Roasted mushrooms provide a savory side dish or can be added to salads, pastas, or served as part of a vegetable platter. The garlic and thyme impart aromatic notes that enhance the earthy mushroom taste.

Ingredients

  • 5 cups mushrooms - any mushrooms work. I use the standard white mushrooms you can buy at the supermarket
  • 3 cloves garlic
  • 3 tems thyme (or lemon thyme)
  • ½ tick butter
  • salt
  • black pepper cracked
  • parsley for garnish, fresh

Instructions

  1. Preheat oven to 400ºF/200ºC.
  2. Cut the mushrooms into quarters (or smaller if you are using the large field mushrooms) and place them into a baking dish. (you want them to be fairly tightly packed)
  3. Finely chop the garlic and scatter it over the mushrooms.
  4. Pull the leaves from the thyme, add them to the mushrooms.
  5. Cut the butter into small cubes and add it to the mushrooms along with plenty of salt and black pepper.
  6. Roast for 15 minutes, then carefully stir and roast for a further 10-15 minutes until the mushrooms are golden browned.
  7. Scatter with fresh parsley and serve immediately.
