Red Velvet Cake Cookies

Red Velvet Cake Cookies soft and cake-like, made from a box red velvet cake mix enhanced with additional flour, butter, and applesauce for moist texture. White chocolate chips add sweetness, and the dough is shaped into small balls and baked until lightly golden. These cookies can be served alone or sandwiched with frosting for a festive treat.

Description

These Red Velvet Cake Cookies use prepared red velvet cake mix combined with all-purpose flour, unsweetened applesauce, softened butter, and a large egg. The applesauce helps keep the cookies soft and somewhat cakey, balancing the sweetness and adding moisture. White chocolate chips folded in contribute bursts of creamy sweetness in every bite.

The dough is mixed until combined, rolled into 1-inch balls, and baked at 350°F for about 10 minutes. After a short cooling period on the cookie sheet, they are transferred to a rack to cool completely. The result is a soft, tender cookie with mild chocolate and vanilla notes characteristic of red velvet.

Variations include adjusting the butter to applesauce ratio for even softer texture, or assembling whoopie pie style by sandwiching two cookies with vanilla cream cheese frosting. The recipe yields around 2 to 3 dozen cookies depending on size.

Ingredients

Servings
  • 1 red velvet cake mix box
  • 1 cup all-purpose flour (use only 1/2 cup if you want them a little sweeter!)
  • ½ cup applesauce unsweetened
  • 1.5-2 cups white chocolate chips
  • 1.5 butter sticks, softened
  • 1 egg large

Instructions

  1. Leave butter out to soften and preheat oven to 350 degrees F.
  2. Once softened, beat with a hand-mixer until fluffy.
  3. Next, slowly add flour and cake mix until incorporated.
  4. Add your egg and mix completely.
  5. Fold in white chocolate and roll dough into 1 inch balls.
  6. Place on a bare cookie sheet and bake for approx 10 minutes.
  7. Allow to cool for 2 minutes on the baking sheet and then transfer to a wire rack to finish cooling completely.
  8. Fluffing these up with applesauce has the potential to make cakey, whoopie pie-like cookies that would taste awesome sandwiched with some frosting in the middle. YUM!

Notes

  • For fluffier cookies, try 1 stick of butter and 1 cup applesauce instead of 1.5 sticks butter and 1/2 cup applesauce.
  • Make whoopie pies by sandwiching cookies with vanilla cream cheese frosting for a festive treat.
  • Recipe yields 24 to 36 cookies depending on size.
