Red Velvet Cheesecake Bites

Red Velvet Cheesecake Bites are creamy cream cheese and butter balls mixed with powdered sugar, crushed graham crackers, and vanilla, chilled and then coated with crumbled red velvet cake. The process involves baking a boxed red velvet cake for the coating crumb, combining a sweet cream cheese filling, and assembling bite-sized treats with a balance of smooth and cakey textures.

Description

This recipe starts by preparing a boxed red velvet cake as directed, cooling it completely, and then crumbling it into fine pieces. To reduce moisture and improve coating adhesion, moist cake crumbles can be dried briefly in the oven.

The cheesecake filling is made by creaming softened cream cheese, butter, and powdered sugar together, then incorporating crushed graham crackers and vanilla extract. This mixture is scooped and rolled into balls before chilling to firm up.

After chilling, the cream cheese balls are rolled in the prepared red velvet crumbs to create a textured exterior. The bites offer a blend of creamy sweetness with the moist, slightly chocolatey crumb coating characteristic of red velvet.

These cheesecake bites serve as an elegant, small dessert option suitable for parties or special occasions where finger foods are preferred. Sweetness can be adjusted by increasing powdered sugar to preferences.

Ingredients

Servings

For the red velvet crumb

  • 1 red velvet cake mix box
  • 1 ingredients on cake mix packaging

For the cream cheese filling

  • 16 ounces cream cheese , room temperature
  • 4 tablespoons butter , room temperature
  • 1/2 cup powdered sugar
  • 2 cups graham crackers , crushed
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and line or grease 2 8-inch cake pans.
  2. Prepare the cake as indicated on packaging. Bake, then let cool down completely.
  3. Once cool, crumble the cake with your hands until it looks like coarse sand. If the cake is too moist, break it into small chunks, then place on a lined baking sheet. Dry it out in the oven at 350°F for 5-6 minutes.
  4. Separately, in a large mixing bowl combine the cream cheese, butter and sugar. Cream with an electric mixer until fluffy and aerated.
  5. Place the graham crackers in a ziplock bag and crush them into a fine powder using a rolling pin. Add the crushed graham crackers and vanilla extract into the cream cheese mixture and mix well until fully combined.
  6. Use a 2 teaspoon cookie scoop to scoop out cream cheese balls. Roll them with your hands until fully round, then place them on a lined baking sheet or large plate. Refrigerate for 1 hour to harden.
  7. Once chilled, roll the cream cheese balls through the red velvet cake crumbs. Ensure all sides are fully coated in the cake crumb. Use your hands to make the bites more round if needed.
  8. Enjoy immediately or refrigerate until ready to consume.

Notes

  • Adjust sweetness by adding up to 2 cups powdered sugar to the cream cheese mixture for a sweeter bite.
