Red Velvet Gooey Butter Cookies

Red Velvet Gooey Butter Cookies use cream cheese, butter, and red velvet cake mix to create a dense, rich dough that becomes soft and slightly gooey baked. Rolling the dough in powdered sugar before baking gives a delicate sweet crust that contrasts with the creamy interior. Cooling on a wire rack helps set the texture for easy handling.

Description

In this recipe, cream cheese and butter at room temperature are beaten together before incorporating an egg and vanilla extract to create a smooth base. Adding red velvet cake mix provides the signature cocoa and slight tang of red velvet flavor. The dough is chilled to firm it up for easier rolling into tablespoon-sized balls.

The balls are rolled in powdered sugar to form a lightly sugary crust and baked at 350°F until the edges are just set, maintaining a gooey, tender center. The result is a cookie with a soft crumb and a creamy, slightly tangy richness from the cream cheese.

Cooling on a wire rack ensures the cookies firm slightly without drying out, preserving the gooey texture that makes these cookies distinctive. They can be served plain or with their characteristic red velvet color for visual appeal.
