Red, White and Blue Puff Pastry Breakfast Tart

This breakfast tart combines buttery puff pastry with a creamy spread of sweetened cream cheese and double cream, topped with fresh mixed berries. The pastry is baked with a raised border to create a crisp, golden crust and a tender center that holds the creamy filling. The colorful berries add fresh, tart counterpoints to the smooth base, making the tart visually appealing and flavorful.

Description

The Red, White and Blue Puff Pastry Breakfast Tart starts by baking a puff pastry sheet with a scored border to allow the center to puff separately, resulting in a flaky, crisp edge and a softer middle. The pastry is pricked with holes to prevent over-rising in the center.

The creamy filling is a mixture of cream cheese, double cream, and icing sugar whisked until smooth and spread over the cooled pastry. Topping it with a variety of berries adds natural sweetness and a mix of textures—juicy and slightly tart—that contrast the rich creaminess of the filling and the flaky crust.

Served cut into portions, this tart works well for breakfast or brunch gatherings where a fruity, creamy pastry is desired. The recipe notes encourage experimenting with different fruit toppings as variations.

Ingredients

Servings
  • 1 puff pastry sheet, thawed
  • 150 g cream cheese
  • 3 tbsp cream double
  • 3 tbsp icing sugar (powdered sugar)
  • 400 g berries

Instructions

  1. Preheat oven to fan-assisted 180C / 200C / 400F / gas 6.
  2. Prepare the puff pastry sheet by slicing a half inch border (careful not to slice all the way through) and prick holes in the pastry. If you want a golden crust brush the edge of the pastry with egg wash.
  3. Bake the pastry for 18 mins, remove from the oven and let it cool.
  4. Add the cream cheese, double cream and icing sugar into a bowl and whisk until combines.
  5. In bowl mix together your cream cheese, powdered sugar and vanilla and whisk until combined.
  6. Add the cream cheese mix on to the puff pastry and spread.
  7. Then top with berries and icing sugar, cut in to portions and serve.

Notes

  • Use various fresh berries to top the tart, or try other fruits to customize the flavors.
