Instructions
- Add mixed berry juice to a medium sized bowl. Sprinkle with 2 1/2 tbsp gelatin and whisk until smooth.
- Heat 1 cup cherry juice in microwave for about 1 minute until hot, but not boiling. Add to bowl with berry juice and gelatin. Whisk until smooth. Allow to cool for a few minutes, then add vodka and mix.
- Pour red layer into a 9x13-inch baking sheet (I did this while I had the baking sheet sitting on a refrigerator shelf already). Allow to set up for at least 3 hours before adding next layer.
- Add 1/2 of the coconut milk to a medium bowl and sprinkle with 2 tbsp of gelatin. Whisk until smooth.
- Heat remaining coconut milk in microwave for about 1 minute until hot, but not boiling. Add to bowl and whisk until smooth. Allow to cool for a few minutes, then add vodka and mix.
- Pour white layer on top of red layer. Allow to set up for at least 3 hours before adding next layer.
- Add 1/2 of the water and lemon juice to a medium bowl and sprinkle with 2 1/2 tbsp of gelatin. Whisk until smooth.
- Heat remaining water in microwave for about 1 minute until hot, but not boiling. Add monkfruit sweetener to hot water and stir until dissolved. Add to bowl and whisk until smooth. Allow to cool for a few minutes, then add vodka and mix.
- Pour clear layer over white layer. Add blueberries and spread them evenly. Allow gelatin to set up overnight before cutting into pieces.
Notes
- You don't have to use 2 kinds of juice in the red layer, but I liked the color and flavor better with a combo rather than just using one juice or the other.
