Red, White & Blue Finger Jello

The Red, White & Blue Finger Jello is a festive layered gelatin dessert combining strawberry and berry blue flavors separated by creamy sweetened condensed milk layers. The bright-colored gelatin layers set firmly while the milk layers add a smooth, opaque contrast. This recipe creates a visually striking and texturally diverse treat suited to celebratory occasions, requiring some layering and chilling time for best results.

Description

This dessert consists of multiple layers of flavored gelatin and creamy sweetened condensed milk gelatin. The strawberry and berry blue gelatin layers are mixed with a small amount of unflavored gelatin for firmness, dissolved in boiling water, and set in a pan to create vibrant red and blue layers. The white layers combine sweetened condensed milk with dissolved unflavored gelatin to add creaminess and a smooth texture that contrasts with the firmer fruit-flavored layers. Each layer is chilled until set before pouring the next to maintain clear separation and distinct colors.

The final product is a finger-sized jello, ideal for portion-controlled servings at parties or patriotic-themed events. Its combination of fruity flavors and creamy layers offers a balance of tartness and sweetness along with a appealing mouthfeel. The recipe requires some patience for chilling time between layers and care to cool gelatin mixtures before layering to prevent blending.

The dessert should be refrigerated to maintain texture and served chilled, making it a refreshing option during warmer weather or festive occasions featuring red, white, and blue themes.

Ingredients

Servings
  • 2 ounce strawberry jello boxes
  • 2 ounce berry blue Jello boxes
  • 14 ounce sweetened condensed milk can
  • 4 .25-ounce unflavored gelatin envelopes, e.g. Knox
  • water boiling

Instructions

  1. Spray an 8-inch or 9-inch square baking pan with nonstick cooking spray.
  2. In a small bowl, stir together 1 box of the strawberry Jello, ½ an envelope of the Knox gelatin and 1 cup of the boiling water, ensuring everything has dissolved. Pour into the prepared pan and place in the refrigerator to set, about 15 minutes.
  3. Meanwhile, in a medium bowl, stir together the sweetened condensed milk and 1 cup boiling water. In a separate small bowl, sprinkle 2 envelopes of the unflavored gelatin over ½ cup cold water. Allow to sit for 5 minutes. Add ½ cup boiling water to the unflavored gelatin mixture and stir to dissolve. Pour into the sweetened condensed milk mixture and stir to combine.
  4. Once the red layer is set, pour 1 cup of the milk mixture over the red layer. Place in the refrigerator for at least 15 minutes.
  5. Repeat the layers, alternating the red and blue between the white layers, with blue being your last layer. Ensure that the colored Jello mixtures cool to room temperature before pouring over the previous set layer.
  6. Once all of the layers have been poured, refrigerate for at least 4 hours. When ready to serve, run a thin knife around the edges of the pan and turn the Jello out onto a cutting board. Cut into squares and serve, refrigerating any leftovers.

Notes

  • Ensure each gelatin layer is fully set before adding the next to keep distinct, clean layers.
  • Allow colored gelatin mixtures to cool to room temperature before layering to prevent mixing.
  • Use an 8- or 9-inch square pan for proper thickness and ease of serving finger-sized pieces.
