A Reese's Peanut Butter Cup heaven! A fudgy brownie stuffed with Reese's, a creamy peanut butter cheesecake layer and topped with chocolate! Amazing!

Ingredients
Brownie Layer
- ¾ cup butter
- 6 ounces chopped dark chocolate
- 1 ½ cups granulated sugar
- ½ cup packed brown sugar
- 1 ½ teaspoons vanilla extract
- 3 large eggs
- 1 cup all-purpose flour
- 1 (12-ounce) bag mini Reese's peanut butter cups, divided and chopped
Peanut Butter Cheesecake Layer
- 1 (8-ounce) package cream cheese, softened
- ¼ cup softened butter
- 1 egg
- ½ cup granulated sugar
- ½ teaspoon salt
- ½ teaspoon vanilla extract
- 1 cup creamy peanut butter
Chocolate Topping
- 1 (12-ounce) bag milk chocolate chips
Instructions
Brownie Layer
- Preheat the oven to 350 degrees Fahrenheit. Spray a 13 x 9 x 2-inch baking dish with non-stick cooking spray and set aside. Chop 1 (12-ounce) bag mini Reese's peanut butter cups, into fourths and divide them in half.
- In a microwave-safe bowl or over a double broiler, melt ¾ cup butter and 6 ounces chopped dark chocolate. Stirring every 30 seconds being careful not to let the chocolate burn.
- Whisk 1 ½ cups granulated sugar and ½ cup packed brown sugar into the melted chocolate mixture. Then add 1 ½ teaspoons vanilla extract and 3 large eggs until it is fully incorporated.
- Stir in 1 cup all-purpose flour until incorporated. Fold in half of the chopped Reese's Peanut butter cups then pour the mixture into your prepared pan.
Peanut Butter Cheesecake Layer
- In a stand mixer using the paddle attachment, cream together 1 (8-ounce) package cream cheese, and ¼ cup softened butter for about 2 minutes until fluffy. Mix in 1 egg, ½ cup granulated sugar, ½ teaspoon salt, and ½ teaspoon vanilla extract on high for another 2 minutes. Mix in the 1 cup creamy peanut butter, for about 2 minutes.
- Pour the cream cheese layer over the brownie layer and spread it out so that it is smooth on the top and completely covers the brownie layer.
- Bake for 35-40 minutes. The top and edges should be slightly golden and the center is set.
- Let the bars completely cool then refrigerate for at least an hour before adding the chocolate layer on top.
Chocolate Topping
- To make the chocolate layer, in a microwave-safe bowl, add 1 (12-ounce) bag milk chocolate chips. Melt 30 seconds at a time until melted and smooth. Pour over the top of the peanut butter cheesecake layer and spread evenly. Sprinkle the rest of the chopped peanut butter cups on top.
- Place the bars in the refrigerator to cool until the chocolate is set. Cut into squares and serve.
