Reese's Peanut Butter Earthquake Cake
Description
This cake starts with prepared chocolate cake batter poured into a greased 9x13-inch pan, left unbaked initially. A mixture of softened cream cheese, melted butter, peanut butter, vanilla extract, and powdered sugar is whipped into a light, fluffy cream topping. This peanut butter cream mixture is spooned and spread over the raw chocolate cake batter, then scattered with semi-sweet chocolate chips and halved mini Reese’s peanut butter cups for added texture and flavor.
Once assembled, the cake bakes for about 45-55 minutes until the center sets, allowing the two layers to bake together while maintaining distinct textures. The final cake features a tender chocolate base and a rich, slightly tangy peanut butter cream center dotted with melty chocolate and peanut butter candy pieces, offering a combination of creamy, sweet, and slightly dense mouthfeel.
The cake is ideal for those who enjoy peanut butter paired with chocolate in a layered dessert. It can be served slightly warm or cooled, allowing the flavors to meld further. The ease of preparing the cream cheese-peanut butter layer separately and layering over the batter makes it straightforward for home bakers to achieve a visually impressive and flavorful cake.
Ingredients
- 1 chocolate cake mix plus ingredients needed to prepare (eggs, oil, water)
- 1/2 cup butter melted
- 8 ounce cream cheese softened, package
- 1/2 cup peanut butter
- 1/2 teaspoon vanilla extract
- 4 cups powdered sugar
- 1/2 cup chocolate chips semi-sweet
- 1 cup peanut butter cups halved, mini Reese’s brand
Instructions
- Preheat oven to 350F degrees. Grease a 9x13-inch glass baking dish with non-stick cooking spray.
- Prepare chocolate cake mix according to package instructions and pour into the prepared 9x13-inch baking dish; set aside (do not bake yet).
- In a large mixing bowl, beat the butter and cream cheese together with an electric mixer until smooth (at first it will look “globby” but keep beating until it is smooth and creamy).
- Add the peanut butter and vanilla extract and beat until smooth.
- Add one cup of powdered sugar at a time to bowl and mixing well until fully incorporated and mixture becomes light and fluffy.
- Scoop the peanut butter mixture on top of the unbaked chocolate cake batter. Sprinkle with the semi-sweet chocolate chips and peanut butter cups over top of the peanut butter layer.
- Bake the cake for 45-55 minutes or until the center of the cake is set. Cool slightly before serving.
