Description

Refogado, the Brazilian sofrito, combines quartered onion, peeled garlic cloves from about three heads, and olive oil blended into a thick, chunky paste. This mixture serves as a foundational flavoring agent, infusing dishes with the distinctive taste of garlic and onion softened in oil.

The heavy use of garlic gives it a pungent character balanced by sweetness and depth from the onion and oil. Preparation involves blending until just chunky rather than smooth, preserving texture that melds into cooking bases.

For practical use, the refogado can be stored in mason jars refrigerate up to five days or frozen in tablespoon portions in silicone ice trays. These frozen "sofrito bombs" can be added directly to dishes while cooking without thawing, making them convenient for everyday cooking.

Ingredients

  • 1 onion quarted, medium
  • 1 cup garlic from about 3 whole heads of garlic, cloves, peeled
  • 1/2 cup olive oil

Instructions

  1. Add all the ingredients to a blender, or food processor and pulse a few times, until you reach a chunky paste consistency.
  2. Store in mason jars for consumptions within 5 days. You can also fill each little compartment of a silicone ice tray, with about a tablespoon of sofrito each. Then, place it in a ziplock bag and freeze for up to 3 months. No need to defrost the little frozen "sofrito bombs". Just add them frozen to the pan and they will "melt".
