Refried Beans
Description
This recipe begins by cooking diced onion until translucent in vegetable oil, then adding garlic and canned pinto beans (with their liquid) to the pot. The mixture simmers on low heat with spices including cumin and chili powder, seasoned with kosher salt to taste.
Cooking the beans allows flavors to meld and soften the beans further. After simmering, the beans are mashed to desired consistency, which can vary from chunky to smooth depending on preference.
Refried beans are a versatile side dish in Mexican cuisine, commonly served with tortillas, rice, or as a topping for various meals. They provide a hearty texture and smoky, spiced flavor from the seasoning used.
Ingredients
- 1/4 cup vegetable oil
- 1 yellow onion , diced
- 5 garlic minced, cloves
- 45 ounces pinto beans (3 cans; do not drain)
- 2 teaspoons cumin
- 1 teaspoon chili powder
- 1 teaspoon kosher salt
Instructions
- Add the vegetable oil to a large Dutch oven on medium heat with the onions and cook for 4-5 minutes until translucent, then add in the garlic and pinto beans and cook stirring frequently for another 5 minutes.
- Lower the heat to low, add in the cumin, chili powder and salt and simmer for 10 minutes then mash the beans to your desired consistency and serve with desired toppings.
Notes
- Using the canned beans with their liquid helps achieve a creamy texture without adding extra water.
- Adjust the consistency by mashing more or less, depending on personal preference.
- The recipe timing allows setting kitchen timers for onion cooking and simmering stages for better control.
