Relleno de pavo or turkey stuffing

Relleno de pavo is a rich turkey stuffing combining ground beef, chorizo, and bacon with aromatics, sweet and savory dried fruits, olives, and nuts, all seasoned with warm spices and fresh herbs. The mixture is moistened with eggs, bread crumbs, sweet wine, and broth or wine, baked until golden and cooked through. This complex stuffing offers a hearty, flavorful accompaniment to turkey or can be served solo as a meat-rich side.

Description

This traditional Relleno de pavo recipe starts by sautéing onions, garlic, achiote, cumin, and salt in butter to create a fragrant base. Ground beef, chorizo, and bacon add hearty and savory elements. Incorporating dried fruits like raisins or cherries, diced apples, walnuts, olives, cinnamon, nutmeg, and herbs introduces layers of sweet, nutty, and aromatic flavors. Sweet wine contributes acidity and depth.

Binding ingredients of bread crumbs and beaten eggs hold the stuffing together, while white wine or chicken broth adds moisture. Baking the stuffing in a pan with additional bread crumbs on top produces a lightly crisp crust. It can also be used to fill a turkey cavity, with leftovers baked separately.

The stuffing is savory with subtle sweetness and warm spices, suitable for holiday meals or special occasions, pairing well with roast turkey or as a standalone savory side dish.
