Rhubarb Dump Cake

This Rhubarb Dump Cake features a tart rhubarb sauce base topped with a crumbly mixture of French vanilla cake mix, oats, pecans, and butter. The topping bakes into a golden, crisp crumble that complements the bubbling, tender rhubarb beneath. The dessert brings a balance of tart and sweet with varied textures, making it a satisfying warm dish to enjoy with cream or ice cream.

Description

The recipe begins with a rhubarb sauce layer, which can be homemade or store-bought, poured into a baking dish. A topping is created by combining dry French vanilla cake mix, rolled oats, and chopped pecans. Melted butter is mixed into the dry ingredients until a coarse crumbly texture forms without any dry flour remaining. This topping evenly covers the rhubarb, baking until golden and crisp on top while the rhubarb sauce bubbles beneath.

The cake combines the tangy brightness of rhubarb with a sweet, crunchy topping that lends texture and richness. Baked at a moderate temperature, the crumble turns a light golden color and offers nutty and oat-filled bites that contrast the soft fruit layer. Serving it warm or at room temperature with whipped cream or ice cream adds creaminess and softness to the dessert.

Leftover dump cake can be stored covered at room temperature for up to three days, allowing the flavors to meld further. The recipe utilizes pantry ingredients and approachable methods that make it practical for home bakers.

Ingredients

Servings
  • 4 cups rhubarb sauce my recipe here, or compote
  • 15 ounce French Vanilla Cake Mix we're using just the dry mix, box
  • 1/2 cup rolled oats
  • 1/2 cup pecans chopped
  • 11 Tbsp butter salted, melted

Instructions

  1. Preheat oven to 350F
  2. Put the cake mix, oats, and pecans in a bowl and toss to combine well.
  3. Melt the butter and drizzle the butter over the cake mix and stir well. It helps to use your fingers to combine everything into a coarse crumbly texture. Keep mixing until no dry flour remains. It will have a large rubbly crumble texture. Set aside.
  4. Pour 4 cups rhubarb sauce into your 9x13 baking pan.
  5. Sprinkle the crumble evenly over the fruit.
  6. Bake for about 45-50 minutes, or until the crumble is starting to turn golden and the rhubarb is bubbling. Serve warm or at room temperature with whipped cream or ice cream.
  7. Store leftovers at room temperature covered with foil. Consume within 3 days.
