Relax this summer with a tall, cold, and refreshing Rhubarb Mojito! This twist on the classic citrus-mint cocktail is extra beautiful and delicious with the addition of an easy homemade rhubarb syrup.

Ingredients
- 10 mint leaves
- 1½ ounces freshly squeezed lime juice
- 3 ounces chilled Ruby Rhubarb Syrup
- 2 ounces chilled white rum
- 1 ounce chilled Cointreau
- 3 ounces chilled club soda
- Lime wedges for garnish
Instructions
- *This recipe makes one drink, but the recipe for the Ruby Rhubarb Syrup will yield about 3 cups of syrup. Simply cut that recipe in half if you like.)
- Place the mint leaves and lime juice in a highball glass. Use a cocktail muddler or the back of a spoon to crush the mint and release its flavorful oils. Add the Ruby Rhubarb Syrup, rum, Cointreau, and club soda.
- Add crushed ice to nearly fill the glass, and then stir just a bit to combine. Squeeze a fresh lime wedge over the top and add another wedge to the side of the glass for garnish. Enjoy!
