Rice Krispie Balls

Rice Krispie Balls combine the crunch of puffed rice cereal with a smooth, peanut butter-sweetened coating made from corn syrup and powdered sugar. Rolled into small spheres, these treats are chewy and slightly sticky, providing a satisfying texture contrast. They are easy to make and great for snacks or parties, storing well in an airtight container or freezer for convenience.

Description

Rice Krispie Balls mix corn syrup, powdered sugar, and creamy peanut butter heated until smooth, then combined with Rice Krispie cereal to coat every piece evenly. Small spoonfuls of this sticky mixture are shaped into bite-sized balls and left to cool on a silicone mat or wax paper. The result is a chewy, crunchy treat with sweet and nutty notes from the peanut butter. The method relies on careful heating to avoid drying out the mixture, preserving a soft but stable texture.

This recipe works well for a quick homemade snack or as a portable sweet bite that doesn't require refrigeration before serving. Their compact size makes them suitable for lunchboxes or casual gatherings.

To store, keep the balls in an airtight container at room temperature for up to three days. They can also be frozen individually on a tray before transferring to a freezer bag for up to three months. Thaw completely before eating for the best texture.

Ingredients

Servings
  • 1 cup corn syrup
  • 1 cup powdered sugar
  • 1 cup peanut butter creamy
  • 1 teaspoon vanilla extract
  • 4 cups rice krispie cereal

Instructions

  1. In a large saucepan, over medium-high heat, add the corn syrup and sugar. Stir constantly while you bring it to a boil.
  2. Remove the pot from the heat and add the peanut butter and vanilla. Stir until smooth.
  3. Mix in the cereal. Stir until well-coated.
  4. Use a silicone mat or wax paper. Drop the mix, a spoonful at a time, onto the mat. Roll the drops into balls and cool.

Notes

  • Remove the sugar and corn syrup mixture from heat as soon as it begins to boil to prevent the treats from becoming dry and crumbly.
  • Store finished Rice Krispie Balls in an airtight container for up to three days to maintain freshness.
  • For longer storage, freeze the balls individually on a baking sheet, then transfer to a freezer bag and keep for up to three months. Thaw before eating.
