Rice Krispie Easter Nests

Rice Krispie Easter Nests are treats shaped in muffin cups from marshmallow-coated Rice Krispies cereal, then decorated with green-tinted icing and mini candy eggs or sprinkles. Their crispy, chewy texture combines with the buttery sweetness of marshmallows, making them a festive sweet snack or dessert, especially for Easter celebrations.

Description

These nests start by melting butter and mixing in marshmallows until smooth, then folding in Rice Krispies cereal to coat each piece. The mixture is spooned into greased muffin cups and formed with an indentation in the center to create a nest shape. Once cooled, the nests hold their shape and have a chewy yet crisp texture from the rice cereal.

The decorating icing is made by mixing powdered sugar with water and optional green food coloring to form a thick paste. This icing is used to secure mini candy eggs and sprinkles inside the nest's center, adding a colorful, festive look. The nests offer a buttery-sweet flavor from the marshmallow and butter, paired with crunchy cereal texture.

Rice Krispie Easter Nests serve well as a fun seasonal dessert or snack, particularly suitable for children’s parties or Easter gatherings. They can be made ahead and chilled for easier removal from the pan. The recipe suggests a variety of candy fill options for customization.

Grease muffin tins thoroughly to prevent sticking when removing nests.Create the nest indentation while the mixture is still warm for easier shaping.Allow nests to cool completely before removing from tins; chilling speeds this up.Ensure marshmallows are fully melted and combined with butter for even texture.Fill nests with candies like mini eggs, jelly beans, or sprinkles for decoration.

Ingredients

Servings
  • 2 tablespoons butter
  • 8 oz marshmallows small or chopped large ones, 220g
  • 4 cups Rice Krispies cereal 110g

To decorate

  • 6 tablespoons powdered sugar icing sugar
  • 4 teaspoons water
  • green food coloring optional
  • egg candies mini
  • Sprinkles

Instructions

  1. Lightly grease the cups of a muffin pan with oil or oil spray.
  2. Add the butter to a large pan and melt over a medium/low heat.
  3. Add the marshmallow and stir until it’s all melted.
  4. Remove the pan from the heat, pour in the rice krispies and stir until the cereal is completely coated.
  5. Spoon the mixture into the muffin pan and form into a nest shape by making an indentation in the middle. A lightly buttered or oiled spoon makes it much easier!
  6. Allow to cool completely in the pan before removing.
  7. To decorate, make a fairly thick icing by mixing the powdered sugar with 2 teaspoons of water (add more water or icing sugar as necessary to make a thick paste) and add a few drops of green food colouring if desired.
  8. Spoon a little icing into the rice krispie nests and place in a few mini eggs. Add a few sprinkles.

Notes

  • Grease muffin tins well to ensure the nests release cleanly.
  • Form the nest indentations while the mixture is warm for best shaping.
  • Cool nests completely before removing from muffin pans; refrigeration can speed this.
  • Thoroughly melt marshmallows with butter for a consistent coating of cereal.
  • Decorate nests with mini candy eggs or sprinkles using thick icing as adhesive.
  • Serve these nests as a seasonal dessert or treat for Easter celebrations.
