Rich Chocoate Vegan Frosting
Description
This vegan frosting uses 100% cacao unsweetened chocolate melted with coconut cream and espresso powder to build a deeply chocolate base. The mixture is gently heated in the microwave, stirred to melt the chocolate fully, then confectioners sugar is gradually incorporated through beating to reach a creamy and spreadable consistency. Vanilla extract adds aroma and sweetness.
The frosting's texture is initially soft enough for easy spreading or piping but firms when chilled, making it suitable for decorating cakes or cupcakes without dairy ingredients. Adjusting coconut cream and sugar levels allows control over thickness.
Practically, the frosting can be stored by placing it in a zip-lock bag, removing air, refrigerating, and then piping out when needed. This handling makes it convenient for preparation ahead of baking or decorating days.
Ingredients
- 3 ounces unsweetened chocolate 100% cacao and dairy free
- 1 cup coconut cream about half of 14 oz can, may need more
- 1 tsp espresso powder or instant espresso
- 5 cups confectioners sugar sifted
- 1 Tbsp vanilla extract or vanilla paste
Instructions
- Chop the chocolate into small pieces and put in a microwave safe bowl, preferably a bowl big enough to make the frosting in. Add the coconut milk and the espresso powder.
- Microwave for 1 minute, then give the mixture a stir. Microwave for another 30 seconds and stir again. Keep microwaving in short bursts, if necessary, until the chocolate is melted..Let the heat of the mixture melt the last remaining chunks.
- Start beating in the sugar, adding more as you go to get a nice spreadable consistency. Make sure you beat the frosting until it is smooth and creamy. Scrape down the sides of the bowl a few times. Add more coconut milk if your frosting is too thick, and add more sifted sugar if it seems too thin.
- Use your frosting right away, it will become quite firm in the refrigerator.

- Store leftover frosting refrigerated in an airtight bag to maintain freshness and piping readiness.
