Rich Coffee Brownies (No Dairy!)

Rich Coffee Brownies (No Dairy!) combine almond and coconut flours with chocolate protein powder and ground coffee, delivering a fudgy texture and subtle coffee flavor. These brownies are notably moist due to the avocado oil and the use of eggs, even though they contain no dairy. The coffee frosting adds a creamy, coffee-enhanced topping that complements the dense base well. This recipe caters to those seeking a dairy-free alternative with a boost of protein and a deep chocolate-coffee taste.

Description

Rich Coffee Brownies (No Dairy!) focus on blending almond and coconut flours with chocolate-flavored protein powder and ground coffee to produce a thick, fudgy batter. The eggs and melted chocolate chips provide moisture and richness, while the avocado oil adds smoothness without dairy. Ground coffee in the mix and brewed coffee in the vanilla protein powder frosting infuse the brownies with a balanced coffee note. The baking time is short, requiring care not to overbake to maintain moistness. Once cooled, the coffee frosting is spread on top, adding a creamy contrast to the fudgy texture. The brownies firm up as they cool and are best stored refrigerated, where they keep for up to five days and can be gently warmed before serving for a softer texture.

The recipe notes caution against cold eggs to ensure proper mixing and highlight that overmixing once eggs and chocolate are combined can affect texture. Different protein powders impact texture and moisture, with some creating drier results. Instant coffee can be substituted for ground coffee in the batter but may lessen flavor intensity. The frosting can be doubled for a thicker layer if desired.

Ingredients

Servings

For The Protein Brownies

  • cup almond flour
  • 1 tablespoon coconut flour
  • ½ cup protein powder chocolate flavor, Transformation brand
  • 2 teaspoons ground coffee
  • cup sugar
  • ½ teaspoon salt
  • ¾ cup chocolate chips
  • cup avocado oil
  • 5 egg

For The Coffee Frosting

  • 4 tablespoons protein powder vanilla flavor, Transformation brand
  • 4 tablespoons coconut milk drain the water, canned
  • 2 tablespoons brewed coffee cooled or room temperature

Instructions

  1. Preheat the oven to 350F.
  2. Melt the oil and chocolate chips over low heat and whisk until smooth. Don’t burn.
  3. Combine the dry ingredients in a large mixing bowl.
  4. Add the eggs into the dry mix and begin to stir.
  5. Pour in the melted chocolate chips and mix until combined but no more.
  6. Line an 8x8 baking pan with parchment paper. Pour the brownie batter in and use a silicone spatula to smooth it out evenly.
  7. Bake for 18-20 minutes. Remove from the oven and let the brownies cool completely before frosting.
  8. In a small bowl, mix together the frosting ingredients until smooth.
  9. Pour on the frosting and smooth it over the cooled coffee brownies.
  10. Slice and enjoy!

Notes

  • Use room temperature eggs to ensure better batter consistency and baking results.
  • Mix the batter just until combined after adding eggs and melted chocolate to avoid tough brownies.
  • Different protein powders affect brownie texture; collagen-based protein powders absorb less liquid, maintaining moistness.
  • Instant coffee can work but yields a milder coffee flavor compared to ground coffee.
  • Store frosted brownies in the refrigerator for up to 5 days; warm slightly before serving to soften.
