Risotto with Olives recipe

  • 400 g rice
  • 1 onion
  • 100 G green olives
  • 300 G tomatoes peeled
  • parsley
  • oregano
  • chili
  • 1 cup white wine
  • 1.25 .25 L broth
  • olive oil
  • butter
  • Parmesan Cheese grated
  • salt

Instructions

  1. Chop the olives and parsley with a table knife. In a pan, fry the chopped onion with oil and butter.
  2. Sprinkle 1 glass of wine and let it evaporate.
  3. Add chopped tomatoes, chopped olives, salt and pepper to taste. Cook for for 15 minutes.
  4. Add the rice, add a little broth at a time until the rice is cooked.
  5. Finally, add the oregano and parmesan.
