Ritz Cracker Christmas Cookies
Description
This recipe involves layering peanut butter between two Ritz crackers to form sandwiches with the rounded sides facing outward. White chocolate melting wafers are melted smoothly, optionally blended with coconut oil for easier coating. Each peanut butter sandwich cookie is then dipped fully in the melted white chocolate and set on parchment paper to firm. Excess chocolate is tapped off to avoid thick coatings. Additional white chocolate drizzle and festive sprinkles decorate the finished cookies. The combination of the savory, buttery Ritz crackers with sweet peanut butter and creamy white chocolate provides a layered flavor experience with crisp, smooth, and creamy textures.
These cookies can be prepared in advance and stored in airtight containers at room temperature for up to a week or frozen for up to three months. Using dark chocolate wafers instead of white chocolate is an available variation for a less sweet finish. The ease of assembly and no-bake aspect make them suitable for holiday treats or quick snacks.
Ingredients
- 2 leeves Ritz crackers ~60 crackers
- 20 oz. white chocolate melting wafers Ghirardelli
- 1-2 Tbsp coconut oil optional
- 1 cup peanut butter creamy, or nut butter of choice
- 1/4 cup Sprinkles festive holiday
- sea salt flaky, for finishing
Instructions
- Line a cookie sheet with parchment paper and lay out 1 sleeve of Ritz crackers with the flat side facing up.
- Spread ~2 tsp. of peanut butter on each cracker, I usually just eyeball it and make sure it's a nice thick layer of peanut butter.
- Carefully place another cracker on top to create a sandwich, with the rounded side up. (2 crackers per cookie)
- Place the white chocolate melting wafers in a microwave safe bowl and heat until melted. I usually heat for 1 minute, stir and then heat for another minute and stir again. It should be melted and smooth. You can add coconut oil into your white chocolate to help with the melting, but if you have the wafers it's not necessary.
- Once chocolate is melted and smooth, dunk each cookie into the white chocolate so it's coated completely and set back on the parchment paper. I like to use a fork to dunk in the chocolate and be sure to tap excess melted chocolate off. Drizzle any extra white chocolate on top of cookies.
- Finish the cookies with sprinkles and flaky sea salt and repeat with the remaining cookies. Allow the chocolate to set up, then serve & enjoy!
Notes
- Freeze assembled cookies in a freezer-safe container for up to 3 months.
- Cookies can be stored in an airtight container at room temperature for up to one week.
- Dark chocolate melting wafers can be used as an alternative to white chocolate wafers.
