Ritz Cracker Thin Mints
Description
This recipe uses simple ingredients: Ritz crackers, chocolate chips, mint extract, and crushed peppermint candy canes. The chocolate chips are melted and combined with mint flavoring, then individual crackers are dipped and coated fully in the mint-chocolate mixture. Sprinkling with crushed candy cane adds texture and extra mint flavor. Allowing the chocolate to harden on waxed paper results in firm, crisp treats with a balance of sweet and cool peppermint taste.
The Thin Mints can be served as a holiday snack or dessert. They store well in a closed container at room temperature for several days, or can be frozen for extended storage, making them convenient for parties or gift-giving.
