Description
Ritz S'mores Cookies consist of pairs of Ritz crackers sandwiched with a small amount of marshmallow creme. The sandwich cookies are dipped into melted chocolate almond bark and placed on wax paper to set. Optional toppings such as crushed graham crackers, bits of marshmallows, and mini chocolate chips are added before the chocolate hardens, providing additional layers of texture and nostalgic flavors.
The combination features the salty crunch of Ritz crackers with the creamy, sweet marshmallow filling and smooth, hardened chocolate coating. Using marshmallow creme ensures easy spreading without a baking step, distinguishing these from traditional s'mores. The almond bark melts quickly in a microwave using short intervals with stirring to avoid burning.
After chilling and hardening, the cookies store well in an airtight container for up to five days. Optional use of halved large marshmallows baked briefly can provide a more traditional melted marshmallow center but requires baking. Wax paper is preferred for easy removal after chocolate hardens.
Ingredients
- 48 Ritz crackers
- 7 ounces marshmallow creme
- 24 ounces chocolate almond bark
- 1 cup graham crackers crushed

Instructions
- In a microwave-safe bowl, melt chocolate almond bark, in 40-second intervals, stirring after each interval, until completely melted.
- Place Ritz’s crackers on a long sheet of wax paper.
- Add a small dollop of marshmallow crème to the center of half the crackers and smooth out.
- Place another cracker on top of the marshmallow crème. Press crackers together, ensuring the marshmallow crème has been distributed evenly.
- Use tongs, or a place on a fork, to grab a cracker sandwich and dip it into melted chocolate.
- Carefully tap tongs on the side of the bowl, removing extra chocolate from the crackers.
- Place dipped cracker onto the wax paper.
- Sprinkle graham cracker crumbles, tiny marshmallows, and mini chocolate chips on top, if you choose before the chocolate dries.
- Allow chocolate to harden.
- Store in an air-tight container for up to 5 days.
Notes
- Marshmallows can replace marshmallow creme if baked briefly at 350°F until melting, then sandwiched and pressed.
- Only use a small amount of marshmallow filling to prevent it from oozing out during dipping.
- Melt almond bark in 40-second microwave intervals, stirring well each time to avoid burning.
