  • 1 tbsp extra virgin olive oil
  • 1 red onion chopped
  • 4 cups White breadcrumbs fresh
  • ½ cup dried apricot chopped
  • ½ cup dried cranberries chopped
  • 1/3 cup pistachio chopped
  • ¼ cup sage chopped, leaves
  • 2 egg whisked
  • salt to taste
  • black pepper to taste
  • coarse salt for the rind
  • vegetable oil for the rind
