- 1.5 kg loin pork boned and rolled, 3 1/3 lbs
- 20 gms butter 1 tbsp
- 1 tbsp extra virgin olive oil
- 1 red onion chopped
- 4 cups White breadcrumbs fresh
- ½ cup dried apricot chopped
- ½ cup dried cranberries chopped
- 1/3 cup pistachio chopped
- ¼ cup sage chopped, leaves
- 2 egg whisked
- salt to taste
- black pepper to taste
- coarse salt for the rind
- vegetable oil for the rind
