Roast Vegetable Pasta Sauce

This Roast Vegetable Pasta Sauce blends roasted eggplant, garlic, tomato wedges, red bell pepper, and carrot with tomato sauce to create a smooth, flavorful sauce. The vegetables are roasted until tender, pureed, and combined with cooked pasta such as tortellini, ziti, or penne for a hearty, vegetable-forward pasta dish.

Description

The sauce begins with roasting cubed eggplant, whole garlic cloves, tomato wedges, chopped red bell pepper, and carrot tossed in olive oil to promote even cooking and flavor development. Baking at 400 degrees for 45 minutes softens the vegetables, allowing natural sweetness and depth to emerge.

After cooling, the roasted vegetables are pureed with tomato sauce into a smooth mixture that highlights the natural flavors of the ingredients. Cooking pasta according to package instructions and tossing it in the sauce integrates this comfort meal quickly.

This sauce offers a nutrient-rich alternative to traditional tomato sauces with added body and sweetness from the roasted vegetables. It pairs well with various pasta shapes, making it suitable for either a weeknight dinner or a casual lunch.

Prepared sauce freezes well for up to four months and should be thawed overnight before reheating to maintain quality and texture.
