Ingredients

  • 4 cups fresh broccoli florets chopped into bite-sized pieces
  • 3-4 fresh carrots peeled and sliced
  • 1/2 bulb of garlic cloves separated and peeled
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F and line a large baking sheet with parchment paper.
  2. In a large bowl, combine the broccoli florets and sliced carrots.
  3. Peel the garlic cloves and add them to the bowl with the vegetables.
  4. Drizzle the olive oil over the vegetables and sprinkle with salt and pepper. Toss everything together to coat evenly.
  5. Spread the vegetables out on the prepared baking sheet in a single layer.
  6. Roast in the preheated oven for 15 minutes, then stir the vegetables and continue roasting for another 10 minutes, or until they are tender and lightly browned.
  7. Remove from the oven and serve immediately. DEVOUR!
