Roasted Broccoli and Carrots Recipe

This recipe features tender roasted broccoli and sliced carrots seasoned with Italian herbs, salt, and pepper, then finished with a sprinkle of grated Parmesan cheese. The roasting process softens the vegetables while creating browned spots that add a slight caramelized flavor. These vegetables make a simple, savory side dish that complements many meals without requiring complicated preparation.

Description

Roasted Broccoli and Carrots Recipe combines fresh broccoli florets and sliced carrots tossed in olive oil and Italian seasoning, then baked at a high temperature until soft with some charred edges. The heat enhances the natural sweetness of the carrots and brings out a nutty depth in the broccoli. Sprinkling Parmesan cheese right after baking adds a salty, umami-rich topping that enhances the overall taste.

The dish can easily be served alongside roasted meats, grilled dishes, or as part of a vegetable platter. It’s straightforward enough for everyday meals but also suitable for casual gatherings.

Ingredients

Servings
  • 6 medium carrot sliced
  • 1 head broccoli cut into florets
  • 2 tablespoons olive oil
  • 1 tablespoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup Parmesan Cheese grated

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit. Put the carrots and broccoli into a large bowl. Add the oil, Italian seasoning, salt, and pepper and mix well.
  2. Spread the veggies out in a single layer on your baking sheet. If you have a small baking sheet, it's best to use two so you don't crowd the pan.
  3. Bake for 25-25 minutes, until the veggies are soft and starting to brown in a few spots. Remove the pan from the oven and sprinkle the parmesan cheese over the top.
