Roasted Brussels Sprouts with Garlic

This recipe features whole brussels sprouts roasted with olive oil, salt, black pepper, and cayenne pepper for a balanced savory and slightly spicy flavor. Roasting alongside halved lemons and a whole head of garlic imparts brightness and mellow roasted garlic richness. The garlic is squeezed from its skin after roasting and combined with the sprouts before serving, adding a sweet, soft garlic touch that complements the crisp-tender sprouts.

Description

Roasted Brussels Sprouts with Garlic uses whole sprouts tossed with olive oil and seasonings, then spread on a parchment-lined baking sheet. Lemon halves are placed cut side up, and a whole garlic head with its top cut off is added to the pan. At 400°F, roasting for 40 minutes with a toss halfway through cooks the brussels until tender with browned edges. The lemon and garlic soften and caramelize during roasting, enhancing flavor.

After roasting, the garlic cloves are squeezed out of their skins and combined with the sprouts, and the lemon juice is squeezed over the top, adding a bright citrus element. This method results in sprouts with a roasted, slightly smoky flavor balanced by the garlic's mellow sweetness and fresh lemon acidity. It works well as a side dish with a variety of meals.
