Roasted Cherry Tomatoes with Feta Cheese and Crunchy Croutons

Roasted Cherry Tomatoes with Feta Cheese and Crunchy Croutons is a warm dish featuring juicy cherry tomatoes and tangy feta mixed with herb-seasoned bread cubes. Baking it creates crispy, flavorful croutons and soft roasted tomatoes, balanced by fresh mint and oregano. This dish offers a pleasing combination of textures and a savory, bright flavor suited for a side or light meal addition.

Description

This recipe combines whole cherry tomatoes with day-old cubed whole grain bread, tossed in olive oil, oregano, fresh chopped mint, salt, and pepper, then sprinkled with crumbled feta cheese. Roasting at 375°F crisps the bread cubes into crunchy croutons while the tomatoes soften and release their juices, mingling with the cheese and herbs. The contrast between crunchy bread and tender tomatoes gives a layered texture and flavor profile. The fresh herbs add brightness and a subtle aromatic note. Letting the dish rest after baking enhances the flavors as they meld together.
