Ingredients
- 1 tbsp olive oil
- 8 medium chicken thighs skin on and bone in
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 small onion chopped
- 3 talks celery ribs
- 3 medium carrot peeled and chopped
- 3 cloves garlic peeled and minced
- 2 bay leaves dried or fresh
- 6 prigs oregano substitute with 1 tbsp dried
- 12 medium basil leaves fresh, substitute with 2 tbsp dried
- 1 tbsp tomato paste
- 28 oz diced tomatoes canned
- 5 cups water
- 14 oz Navy beans can
- 1 cup small tube pasta
- 1/4 cup Parmesan Cheese finely grated, to serve, optional

- * If you'd prefer the soup can be returned to a simmer with a lid on for 20-30 minutes instead of using the oven.
