Description

Roasted garlic compound butter begins with whole garlic heads that are sliced on top and drizzled with olive oil, then wrapped in foil and roasted until soft and caramelized. Once cooled, the tender garlic cloves are squeezed out and blended into softened salted butter along with finely chopped parsley and rosemary and freshly ground black pepper. This method mellows the garlic's sharpness, enhancing the butter's flavor with herby, savory notes. The final butter has a smooth texture and rich aroma that complements bread, vegetables, or grilled meats.

The roasting process takes about 45 minutes and requires gentle cooling before handling the garlic. Using foil parcels helps concentrate the flavors and prevents burning. The fresh herbs add brightness and complexity to the butter, making it a versatile addition to many dishes.

Ingredients

  • 150 grams garlic This is the weight of unpeeled, whole garlic heads, heads
  • 20 millilitre olive oil to pour over the garlic heads, about one teaspoon each
  • 250 grams butter softened, salted
  • 1 tablespoon parsley finely chopped
  • 1 teaspoon rosemary finely chopped
  • black pepper few grinds

Instructions

  1. Preheat the oven to 180C/356F/gas mark 4. Line a baking sheet with foil for easy clean-up later.
  2. Prepare the heads of garlic by slicing off the very top to expose the cloves inside. This allows the heat and oil to fully penetrate the garlic. It also makes it easy to squeeze the garlic out later.
  3. Place each garlic head onto a piece of square foil of about 20cmx20cm.
  4. Drizzle roughly one teaspoon of olive oil over the cut top of each garlic head.
  5. Wrap the foil around each garlic head to make a sealed parcel. Place all the parcels on the baking sheet.
  6. Roast the garlic for 45 minutes, until soft and lightly caramelized. Check for doneness by unwrapping one head and looking for soft, brown cloves. Give it another 5 minutes in the oven if needed.
  7. Let the roasted garlic cool for 15 minutes before handling. Squeeze the soft cloves out of their skins when they're cool enough.
  8. Add the softened butter and fresh herbs to a food processor. Blend until fully combined.
  9. Add the roasted garlic cloves and blend again until evenly distributed throughout the butter.
  10. Transfer the butter to a sheet of cling film/plastic wrap. Shape into a log and wrap tightly.
  11. Chill the compound butter in the fridge to firm up.
