Roasted Garlic Mashed Red Potatoes

  • 1 garlic click the link up above for instructions on roasting, roasted bulb
  • ¾ lb potato cut into 1-inch chunks, red
  • 1/4-1/3 cup milk
  • 2 tbsp butter softened
  • 1-2 tbsp sour cream to taste
  • salt to taste, sea salt and freshly cracked
  • black pepper to taste, sea salt and freshly cracked

Instructions

  1. Roast the garlic - click here for the instructions.
  2. Cook the potatoes in a large pot of boiling salted water until tender, about 15-20 minutes.
  3. Drain the potatoes; return to the pot, stirring, over low heat for one minute. This dries the excess moisture from the potatoes so they can absorb the milk and butter.
  4. Stir in the roasted garlic (squeezed from the skin), milk, butter, sea salt, and freshly cracked pepper, to taste. Smash the potatoes with a hand masher until you reach your desired consistency. Serve immediately. Enjoy.
