Description
The recipe involves slow roasting a halved garlic head drizzled with olive oil until soft and caramelized, which mellows the raw bite into a rich, creamy texture. Ingredients
For the roasted garlic
- 1 garlic halved, head
- 2 tsp olive oil
For the olive oil dip
- ½ cup olive oil
- 2-3 tsp lemon juice to taste
- 2 tsp oregano rosemary, thyme or sage will also be delicious, dried
- 1 tsp chili flakes or to taste, or red pepper flakes
- salt to taste
- black pepper to taste
- bread for serving
Instructions
- Preheat the oven to 200°C/400°F.
- Place the halved head of garlic on a piece of foil then drizzle over the two teaspoons of oil and season with salt. Wrap in the foil, making sure the garlic is completely enclosed.
- Place in the oven and allow to roast for 30-45 minutes or until completely soft.
- Remove from the oven and allow to cool for 15 minutes.
- Squeeze the roasted garlic out of the papery skins and mash into a bowl.
- Add the olive oil, herbs, chilli flakes, lemon juice, salt and pepper. Mix then taste and adjust seasoning if necessary.
- Serve the dip with good bread.
