Ingredients

  • olive oil cooking spray
  • 1 ½ lbs fresh wild halibut
  • olive oil to taste
  • Sea Salt and Freshly Cracked Pepper to taste
  • garlic powder to taste
  • fresh dill chopped
  • lemon slices
  • 1 pint of mixed cherry tomatoes

Instructions

  1. Preheat the oven to 425 degrees. Coat a large baking dish with olive oil cooking spray.
  2. Cut the halibut into four pieces. Place into the baking pan and drizzle each piece of fish with a bit of olive oil; rub all over evenly. Season both sides of each piece of fish with sea salt, freshly cracked pepper, and garlic powder, to taste. Sprinkle each side with fresh chopped dill.
  3. Place a thin slice of lemon on each piece of fish. Sprinkle the tomatoes all over the baking sheet. Drizzle a bit of oil on them and season them, to taste.
  4. Place into the oven and roast for 10 minutes, or until just before it's flaky. Don't overcook!
  5. Remove the baking pan from the oven and serve with additional lemon if desired. Enjoy.
