Ingredients
- olive oil spray
- 1 ½ lbs halibut fresh, wild
- olive oil to taste
- salt to taste, sea salt and freshly cracked
- black pepper to taste, sea salt and freshly cracked
- garlic powder to taste
- dill chopped, fresh
- lemon slices
- 1 pint cherry tomatoes mixed
Instructions
- Preheat the oven to 425 degrees. Coat a large baking dish with olive oil cooking spray.
- Cut the halibut into four pieces. Place into the baking pan and drizzle each piece of fish with a bit of olive oil; rub all over evenly. Season both sides of each piece of fish with sea salt, freshly cracked pepper, and garlic powder, to taste. Sprinkle each side with fresh chopped dill.
- Place a thin slice of lemon on each piece of fish. Sprinkle the tomatoes all over the baking sheet. Drizzle a bit of oil on them and season them, to taste.
- Place into the oven and roast for 10 minutes, or until just before it's flaky. Don't overcook!
- Remove the baking pan from the oven and serve with additional lemon if desired. Enjoy.
