Roasted Lemon Asparagus
Description
This recipe uses fresh asparagus spears trimmed of their woody ends, dressed simply with olive oil and lemon juice for a bright acidity. Seasoned modestly with sea salt and black pepper, the asparagus roasts in the oven at 375°F until just tender. The roasting process softens the stalks while allowing the tips to develop a slight crisp edge.
The fresh lemon juice adds a tangy citrus note that complements the natural asparagus flavor without overpowering it. The olive oil helps achieve a smooth finish and aids in browning. The gentle roasting brings out a mild sweetness in the vegetable, balancing the lemon's brightness.
Roasted Lemon Asparagus works well as an accompaniment to poultry, fish, or vegetarian meals, providing a light, refreshing vegetable side. It can be served hot or warm out of the oven.
The notes suggest variations like sprinkling Parmesan cheese or adding fresh crushed garlic before roasting to enrich the flavor. Preparing it in advance is possible by assembling the seasoned asparagus on the baking tray and refrigerating until ready to cook. Spacing the spears in a single layer ensures roasting rather than steaming.
