Description
This recipe requires tossing whole mini potatoes with olive oil, Italian seasoning, sea salt, and black pepper, then roasting them on a baking sheet at 400°F. After 20 minutes, grated garlic is mixed in to coat the potatoes well before returning them to the oven for an additional 10 minutes. Ingredients
- 1 ½ lb potato also called creamer potatoes, mini
- 2 tablespoons olive oil
- 1 tablespoon Italian seasoning
- 1 teaspoon salt sea salt
- 1 teaspoon black pepper sea salt
- 2 cloves garlic grated on a Microplane - see notes
- parsley to serve, minced
- lemon to serve, minced
Instructions
- Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper. Toss the whole, mini potatoes with olive oil, Italian seasoning, salt, and pepper then spread them out on a baking sheet and put them into the oven.
- After 20 minutes, add the garlic to the potatoes and mix well. Return the baking sheet to the oven for another 10 minutes, or until the potatoes are golden and soft.
- Serve the roasted mini potatoes with some minced parsley and a squeeze of lemon over the top.
Notes
- Using a Microplane grater for garlic creates a paste that coats potatoes evenly.
- If you don't have a Microplane, finely mince the garlic to prevent large clumps.
