These Roasted New Potatoes are an easy way to liven up a potato side dish, with minimum effort and ready in just 30 minutes.

Ingredients

  • 700 g baby potatoes halved or quartered
  • 2 tablespoon olive oil
  • 3 garlic clove crushed
  • 1 tablespoon fresh Rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • 1 pinch sea salt and ground black pepper

Instructions

  1. Preheat your oven to 200°C/180°C(fan)/400°/F/Gas 6.
  2. Put the cut potatoes into a bowl.
  3. Add the rest of the ingredients.
  4. Mix well so that all the potatoes are coated.
  5. Transfer the potatoes to a baking tray and roast for 30-35 minutes.

Notes

  • Make sure that the potatoes have lots of room on the baking tray. If the tray is too full and the potatoes are too close together, then they will steam rather than roast. If you don't have a tray big enough for all the potatoes, then use two trays.
  • Use a heavy base roasting tin, to help the potatoes get extra crispy.
  • Halve larger new potatoes, as the smaller the potatoes, the crispier they will be. That's the general rule anyway.
  • For extra flavour, you can drizzle these with butter before they go in the oven.
  • The nutritional information for this recipe won't be accurate, and will be an overestimate. This is because they don't absorb all of the oil that has been added to the pan.
  • Make these even more indulgent by sprinkling over some chopped grilled bacon before serving. This is a great option if you are adding the Parmesan too.
  • Preheat the pan in the oven first, this helps them to start cooking straight away.
