  • 2 tbsp vegetable oil

  • 1/2 onion finely diced
  • 4 cloves garlic
  • 1/2 tsp red pepper flakes
  • 1/2 tsp oregano dried
  • 1 cup chicken broth or vegetable
  • 1 tbsp cornstarch

Instructions

  1. Preheat oven to 350. Heat oil in a large pan over high heat.
  2. Season the pork tenderloin on all sides with cajun seasoning. Then place in the hot oil and sear for about 1 minutes on each side.
  3. Cover with lid or foil and transfer to the oven to bake for 25-35 minutes or until it reaches 145˚F internal temp.
  4. Once done, remove the pork tenderloin from the pan and put the pan with drippings on the stove over medium heat. Add the onion and cook until translucent.
  5. Add the garlic, oregano, and red pepper flakes and cook 1 minute, then stir in the broth and bring to a simmer.
  6. Combine the cornstarch with water to form a paste, then stir it into the sauce and simmer for 3-5 minutes or until it thickens.
