Roasted Rutabaga with Maple Syrup uses peeled and chunked rutabagas tossed in olive oil, real maple syrup, dried thyme, salt, and pepper. The mixture is spread in a preheated hot roasting pan to encourage caramelization and cooked for about 40-45 minutes with a mid-roast drizzle of reserved dressing to intensify flavor and crispness. The maple syrup gently caramelizes, balancing the rutabaga’s slightly bitter, earthy flavor with sweetness. Dried thyme infuses herbal notes while salt and pepper season well. Fresh thyme, or alternatively chives, are sprinkled as a finishing touch to add color and aroma.   • 1.5 lb rutabaga (about 3 small rutabaga) - see note 1
  • 2 tablespoon olive oil
  • 3 tablespoon maple syrup - see note 2
  • salt
  • 1 teaspoon thyme dried
  • black pepper
  • 1 tablespoon thyme for garnish - optional, fresh

Instructions

  1. Pre-heat the oven to 200ºC/390ºF. Place a roasting tin the oven to heat up.
  2. Peel the swedes and cut them into large chunks.
  3. Place the swedes in a and dress with the olive oil, maple syrup and dried thyme.
  4. Add in a good sprinkle of salt and pepper and toss to combine well.
  5. Spoon the swede into the roasting tin, reserving any dressing that has pooled at the bottom of the bowl.
  6. Roast in the oven, for 25 minutes, then drizzle over the reserved dressing and cook for a further 15-20 minutes until crisp and golden.
  7. Serve with a sprinkling of fresh thyme (Or chives works well too!)

Notes

  • Rutabaga, or swede, differs from turnips by its color; it is usually yellowy-brown with possible reddish or purplish tones.
  • Use real maple syrup rather than flavored syrups to avoid burning and ensure deep flavor in roasting.
