Roasted Sweet Potatoes and Green Beans

These Roasted Sweet Potatoes & Green Beans are the perfect side dish for any meal! They’re simple, nutritious, and bursting with flavor. The natural sweetness of the tender roasted sweet potatoes pairs beautifully with the crisp, savory green beans, creating a well-balanced dish that’s both comforting and vibrant.

Ingredients

  • 12 oz. sweet potato
  • 12 oz. Green bean trimmed, fresh
  • 2 Tbsp olive oil 30g
  • 2 tsp brown sugar
  • 2 tsp cornstarch
  • 1/2 tsp garlic powder or 2 garlic cloves
  • 1/2 tsp salt
  • 1/4 tsp black pepper or to taste

Instructions

  1. Preheat the oven to 425 degrees F.
  2. Wash sweet potatoes and green beans then pat dry well(!) with a paper towel or clean dish towel.
  3. Trim green beans (if needed) and cut in half. Cut sweet potatoes into 1/2-inch cubes (peel first if desired).
  4. Grease a large rimmed baking sheet and add the sweet potatoes and green beans (best to not use parchment paper with this one so the potatoes can crisp up better!)
  5. Drizzle the olive oil over top, give it a quick toss to evenly coat, then sprinkle the brown sugar, cornstarch, garlic, salt and black pepper over top. Toss together well then spread out into a flat layer. Take a second to move some of the potatoes around if needed so they aren’t touching–they’ll get crispier this way!
  6. Bake in the oven for 15 minutes. Remove and use a greased spatula to flip/toss. Bake for another 5-10 minutes or until roasted to liking.
