  • 400 grams Tenderstem broccoli
  • 2 tablespoons olive oil
  • ¼ teaspoon salt
  • black pepper few good grinds
  • 2 tablespoons pine nuts
  • 2 tablespoons Parmesan Cheese or grana padano, grated

Instructions

  1. Preheat the oven to 220℃/425℉/gas mark 7. Line a large baking sheet with parchment paper.
  2. Wash and dry the broccoli. Press the washed broccoli between sheets of kitchen paper to dry it thoroughly.
  3. Add the broccoli to a large mixing bowl. Add the olive oil, salt and pepper.
  4. Using your hands, toss the broccoli through the oil and spices until all the pieces are well covered.
  5. Arrange the pieces of broccoli onto the baking sheet so that they do not overlap and there is enough space between each piece to allow even roasting.
  6. Roast for 12-15 minutes, depending on how well you want it cooked. We prefer ours not too soft, so we only roast it for 12 minutes.
  7. In the meantime, toast the pine nuts in a pan until they are a light golden brown.
  8. When the broccoli is done, scatter over the toasted pine nuts. Grate over the parmesan and serve immediately.

Notes

  • Arrange tenderstem broccoli pieces with space between them on the baking tray to ensure even roasting and prevent steaming from excess moisture.
